THE HATCH ★ ROTISSERIE & BAR
The Hatch is a simple rotisserie and bar located just off the town square in beautiful downtown Paso Robles. We are fueled by wood fire, small batch whiskey, and a bustling atmosphere full of mingling locals and visitors. An intimate restaurant, seating is a mix of banquettes, high wood tables, and tall backed stools at the bar for those who like front row interaction with some of the best in the cocktail biz. Take a stroll down 13th Street and you’ll find an appealing mix of tasting rooms, boutiques, coffee shops, and live music on many weekend nights.
WELCOME, FRIENDS!
Our vision of a cozy, comfortable joint with great food, all the whiskey, and gorgeous seasonal cocktails was realized when we opened The Hatch in the summer of 2015. By then we had lived in Paso long enough to feel that we could really make a mark on the downtown dining scene, so we quit our day jobs (in wine and restaurants) when the opportunity arose to open a restaurant in the historic Grangers Union Building, just off the downtown park on 13th Street.
With the support of our local and industry friends, The Hatch thrived. Somebody once joked that you couldn’t get to your table at The Hatch without first saying hello to everyone sitting at the bar! That remains one of our greatest compliments.
We are proud to say that today you’ll find a mix of locals, wine & beer industry professionals, and visitors from all over the country chatting it up at the bar, sipping on a mid-week cocktail, or engaging with our amazing team as they enjoy a delicious meal.

DINNER
The Hatch’s comfort food-driven menu is refreshed seasonally while some perennial favorites remain with us year-round. Our wood-fired rotisserie is the focal point of a small, open kitchen, and the team is always happy to chat with guests passing by the window. Sauces are made in-house daily and longer-term projects like fermented hot sauce and pickled seasonal produce are always ongoing.
We source from producers who we feel do an exceptional job and care about the product they bring to market. From Marsh Hen Mill in South Carolina where we buy our grits, to Etto Pastificio who makes our pasta right here in Paso Robles, and whether it’s California-raised Jidori chicken or Tasmanian Wagyu Tri Tip, we cook local while at the same time seeking out like-minded people with a passion for their product.
These items are just kissed with a little wood fire and Hatch magic, plated simply, and delivered to the bustling dining room! We hope you enjoy our brand of purposeful, comforting food.
DRINKS
Artful craft cocktails, an extensive whiskey list, and rotating selections of local wine, beer, and cider all provide refreshing complement to our wood-fired comfort food.
The farmers market-inspired cocktail list features fresh produce, juices, and homegrown garnishes, along with specialty items from The Hatch kitchen like house-pickled fruits & vegetables, jams, and even smoked meats and rendered fats. Well-balanced and skillfully prepared, enjoy a fruit-forward cocktail or mocktail, or try one of our signature Old Fashioneds.
We love working with our winemaker friends and neighbors to offer unique wines and Hatch-focused blends rarely found anywhere outside of our restaurant. Our carefully curated Reserve Wine List presents a special collection that includes library releases and large format bottlings, all produced here in Paso Robles Wine Country. Each of the kegged wines on our focused On Tap list is available by the glass or the carafe. This smart system serves up every pour at the proper temperature and the sealed keg ensures that the last glass tastes as perfect as the first.
RESERVATIONS
We gladly accept reservations for up to eight guests via the Yelp Reservations calendar below. Our restaurant seating is a mix of indoor high and low tables, we will do our best to accommodate any special seating requests.
Reservations are always recommended but walk-ins are welcome! If tables are booked when you arrive you can opt to receive a text message when your seats become available, leaving you free to enjoy the 13th Street and downtown Paso Robles nightlife in the meantime.
